Since I was a little lad dancing through the urban fields of Birmingham, I have been privileged enough to take trips to Pakistan where I was first introduced to proper chai. It was the first thing I looked forward to and my last goodbye of every trip. But it was so frustrating how I could never find that taste in England.
The best way would be to go right back to the source in the mountains of Assam, India. I found some small tea farmers with the exact tea I was looking for. Mixed in was the perfect blend of spices. I brewed the tea anxiously. The amber goodness was poured into the mug.
I waited – it was hot.
I drank.
I fell in love.
